1 bunch green asparagus
1 large clove garlic, finely minced
1 lemon, cut in half and juiced
Mild olive oil
Fresh thyme leaves
Lightly coat the bottom of a small rectangular glass baking dish with olive oil. Snap the tough ends off each asparagus stalk and discard; place the asparagus stalks in the baking dish. Sprinkle minced garlic over the asparagus, then drizzle the fresh lemon juice over the top, adding any bits of lemon pulp. Drizzle olive oil over everything, enough to lightly coat. Sprinkle a small amount of salt over all and add a bit of ground black pepper to taste. Crumble a few thyme leaves on top. Cover the dish with foil. Place in a 375-degree oven for about 20 minutes. Turn the asparagus stalks in the dish. Return to the oven uncovered, lowering temperature to 325 degrees. Roast for about 10 minutes, until asparagus is lightly browned and tender.
