Coconut Dill Cucumbers

2 organic cucumbers
4 ounces of coconut milk
1.5 teaspoons fresh dill
fresh ground black pepper to taste
pink Himalayan salt to taste
Slice cucumbers lengthwise and deseed, then slice into half-moon shapes. In a mixing bowl, combine coconut milk, dill, black pepper and salt. Add cucumbers and chill for one hour, then serve.
