Chicken and squash - lung health recipes

2 pounds boneless chicken breast
1 tablespoon cooking oil
1 teaspoon garlic powder
1/4 teaspoon cumin
1 medium onion, chopped
1/2 cup bell pepper, chopped
salt & pepper to taste
1 can tomatoes and chilies
1 16 ounce can tomatoes
2 cups water or chicken broth
1 medium zucchini squash cut into 1/4 inch cubes
2 small yellow squash cut into 1/4 inch cubes
1 16 ounce can kernel corn, drained


Cut chicken breast into ½ inch pieces, and fry in oil until lightly browned. Add garlic powder, cumin, onion, bell pepper, salt & pepper, tomatoes & chilies, and tomatoes and stir until well mixed. Add water or broth, and simmer for 30 minutes. Add the squash & corn. Simmer until squash is tender (about 20 to 30 minutes).
